Diwali is the Hindu festival of lights celebrated every year in autumn in the northern hemisphere. The day signifies the victory of light over darkness, good over evil, knowledge over ignorance and hope over despair. The festival typically lasts over a five day period, but the main festival night of Diwali conincides with the new moon. In Sanskrit Diwali means "series of lights." 

Our Founder Gavin fell in love with regional vegetarian dishes on our recent trip to India. To celebrate Diwali here is one of his favourite recipes, which includes the Lucky Iron Fish for that extra bit of iron!
