Iron-Packed & Family Friendly Curried Cauliflower Sweet Potato Soup

We're adding a boost of iron to @runningonrealfood's Curried Cauliflower Sweet Potato Soup! The best part is that it takes seasonal ingredients like cauliflower and sweet potatoes, making this family friendly meal also an affordable meal.
Ingredients
- 3 cups diced white onions
- 4 cloves minced garlic
- 1 tbsp curry powder
- 1 tsp red pepper flakes
- 1 large sweet potato
- 1 cauliflower chopped evenly
- Spoonful of salt and sugar
- 4 cups vegetable stock
- 1 can coconut milk
- Lucky Iron Fish or Leaf
- 1 cups fresh or frozen peas
- 2 tbsp lime juice
*optional: Garnish with cilantro
Instructions
🥣 Start by sautéing the onions, garlic, curry powder and red pepper flakes until fragrant.
🥣 Add your prepped veggies: 1 large sweet potato and 1 cauliflower chopped evenly. Also add in a spoonful of salt and sugar.
🥣 Then add vegetable stock and can of coconut milk. Bring it to a boil.
🥣 To the boiling liquid, add your Lucky Iron Fish or Leaf and continue to boil everything for 10 minutes. Then remove the Fish/ Leaf and turn down the heat to a medium-low. Keep simmering until the sweet potatoes are fully cooked through.
🥣 Then with a hand blender, purée until smooth. Stir in 1 cup of peas and 2 tbsp of lime juice. Garnish with cilantro if you would like.
