Prepare Your Stock: The first step in making egg drop soup is to whip up the broth. Whisk together stock (chilled or room-temperature), cornstarch, ginger, garlic powder and white pepper in a medium sauce pan until smooth. In a medium-sized pot, add the stock you just made and bring it to a boil

Add the Lucky Iron Fish: Once your stock has reached a boil, add in the Lucky Iron Fish for 10 minutes to release 6-8 of extra iron into the broth. Let this boil for 10 minutes.

Slowly Stir in the Eggs: While the broth and the Lucky Iron Fish are boiling, go ahead and whisk your eggs in a separate bowl. Once the Lucky Iron Fish is removed, use your ladle to create a slow “whirlpool” motion in the pot. Gradually drizzle in the whisked eggs while continuing to stir until all of the egg mixture has been evenly combined. Make sure not to pour too quickly or else your eggs won’t cook properly. Remove pan from heat once done stirring in eggs.

Add Remaining Ingredients: Now it’s time for flavor! Add 2 tablespoons of sesame oil (optional) and 3 tablespoons chopped green onions into your pot and stir until everything is combined. Taste and season with salt and pepper as needed.

Serve Warm: Just garnish with extra green onions - et voila! Enjoy your quick and delicious egg drop soup full of iron-rich goodness!
