Iron-Boosted Butternut Squash Soup

Sunshine in a bowl ☀️ Boost your iron while enjoying this fall-favourite soup! ⤵️⁠

- 1 Lucky Iron Fish/Leaf⁠
- 3 cups vegetable stock⁠
- 1 cup coconut milk⁠
- 8 cloves garlic, smashed⁠
- 1 carrot, peeled + chopped⁠
- 3 cups butternut squash, peeled, seeded and diced⁠
- 2 onions, chopped⁠
- pinch of turmeric⁠

Seasoning to your taste:⁠
- salt, pepper, cayenne pepper, paprika⁠
- optional: cinnamon, sage⁠


➡️ In a pot, add everything except the coconut milk. Bring to a boil. ⁠

➡️ Once it starts to boil, add in the Lucky Iron Fish/Leaf. Cover and continue boiling for another 10 minutes. ⁠

➡️ Remove the Fish/Leaf after 10 minutes. Check if the carrots and butternut squash are tender. If it needs to cook more, reduce heat, cover with lid, and simmer for another 5-10 minutes. ⁠

➡️ Once everything is cooked, add in the coconut milk and blend using an immersion blender. (If you used fresh sage, make sure to remove it before you blend the soup!). ⁠

The iron enriched soup is ready! Drizzle with coconut milk and serve while it's still nice and warm.
