Iron-Enriched Roasted CauLEAFlower Soup


@thepunnyvegetarian hooked us up with this delicious recipe that the whole family can enjoy!
INGREDIENTS
- 1 cauliflower, chopped into florets
- 4 cloves of garlic
- 1 onion chopped
- 3 cups of veg. stock
- ⅓ cup cashews
- 1 bay leaf
- pinch of thyme + nutmeg
- 1 Lucky Iron Leaf or Lucky Iron Fish
DIRECTIONS:
Preheat the oven to 420·F. On a baking tray, place cauli florets, garlic cloves, onions, and drizzle with olive oil. Bake for ⏰ 25 minutes.
In a saucepan, bring the stock to a boil. Then add the bay leaf, cashews, and your Lucky Iron Fish/ Leaf. Continue boiling for ⏰ 10 minutes.
Remove the bay leaf and the Fish/ Leaf. Simply wash the Fish/ Leaf with dish soap and water like you would any other cooking utensil. Thoroughly dry it.
Add the roasted cauli florets, nutmeg, thyme, and salt + pepper. Use a hand blender to blend the soup till it is a creamy consistency.
There you have it!! Creamy, rich in iron, dairy free bowl of goodness!
