Meatball & Veggies Soup
Is it just us or is there a nasty cold going around?!?
If you are in the same boat, or if you're just looking to make a cozy meal, here is a beautiful IRON PACKED soup that will make you feel nourished and warm🍲
🔹8 oz lean ground beef meatballs
🔹1 Tbsp olive oil
🔹1 1/4 cups 1/4-inch diced carrots
🔹1 1/4 cups diced yellow onion
🔹3/4 cup 1/4-inch diced celery
🔹4 cloves garlic , minced (1 1/2 Tbsp)
🔹5 (14.5 oz) cans low-sodium vegetable or chicken broth⠀
🔹6 oz fresh greens (bok choy, spinach, etc.) , chopped
1️⃣ Heat 1 Tbsp olive oil in a large pot over medium-high heat. Add carrots, onions and celery and sauté until veggies have softened (about 6 - 8 minutes), add garlic and sauté 1 minute longer.
2️⃣ Pour in vegetable or chicken broth, season soup with salt and pepper to taste and bring mixture to a boil.
3️⃣ Add in in your Lucky Iron Fish and meatballs.
4️⃣ Reduce heat to light boil (about medium or medium-low). Cover and cook, stirring occasionally until meatballs have cooked through. ⠀
After 10 minutes, remove the Lucky Iron Fish⠀
Cook the meatballs for slightly longer if needed.
5️⃣Add in your choosing of green leafy veggies during the last minute of cooking. Serve warm and enjoy!
