4 cups No Salt Added Vegetable Broth
1 tsp. Lemon Juice
½ cup Green Chard, chopped
½ cup Green Onion, chopped
½ cup Firm Tofu, cubed
45 g Udon Noodles
1 sheet Nori (dried seaweed), cut into large squares
- Pour vegetable broth into a large saucepan with the Lucky Iron Fish. Add lemon juice. Bring broth to a boil and simmer for 10 minutes.
- Remove Lucky Iron Fish after the broth has simmered for 10 minutes.
- Add the nori to the broth. Simmer for 2-3 minutes.
- Add the remaining ingredients and simmer for 7-10 minutes until noodles are cooked but still firm.
- Serve immediately.
