We simply had to share this #vegandinner recipe by @alexafuelednaturallyâ - it is creamy, delicious, and now it is also iron-enriched! â

INGREDIENTSâ
1 Lucky Iron Fishâ
1/2 cup raw cashewsâ
2 cups #IronWaterâ
16 ounces cremini or shiitake mushrooms (or a mix of both) â
1 tbsp oil â
2 tbsp vegan butterâ
2 tbsp nutritional yeastâ
2 tbsp tomato pasteâ
5-7 sundried tomatoes, sliced â
1 tsp garlic powderâ
1/2 tsp Saltâ
1/4 tsp Pepperâ

đĽŁTO SERVEâ
Brown or white riceâ that is also cooked in Iron Water.â

DIRECTIONSâ
1ď¸âŁ On medium heat, add the oil and the mushrooms to a large pan and sautĂŠ for 10 minutes. â
Season with salt and pepper, add 1 tbsp butter and sautĂŠ for an additional 5 minutes.â
2ď¸âŁ In a blender combine raw cashews and Iron Water. Blend on high until smooth and creamy. â
3ď¸âŁ Pour the cashew milk over mushrooms, then add nutritional yeast, additional tbsp vegan butter, garlic powder, tomato paste, chopped sun-dried tomatoes, stir to combine and lower heat & let simmer until the sauce slightly thickens.
4ď¸âŁ Simmer for 3 minutes, taste and adjust seasonings as needed. Adding salt and pepper to your liking.â
5ď¸âŁ Serve with rice cooked in #IronWater, top with fresh herbs.â

TO MAKE IRON WATERâ
1ď¸âŁ Boil 4 cups of water. Once boiling add 2-3 drops of any acidic ingredient (citrus, vinegar tomato paste, etc.), as well as the Lucky Iron Fish/ Leaf.â
2ď¸âŁ Continue boiling for 10 minutes. Then turn off the heat and remove the Fish/ Leaf. â
3ď¸âŁ Use Iron Water to make rice and the creamy mushrooms!â
