This cold weather vegetarian soup is full of protein and iron, and hearty enough for a main meal. It was shared with us by our friends at CoPower.

Ingredients
- 1 Lucky Iron Fish
- 3 tbsp butter (or 1/4 cup olive oil to make it vegan)
- 1 large onion, chopped
- 3 large carrots, chopped
- 4 garlic cloves, chopped
- 2 tsp cumin
- 1 tsp curry powder
- 1/2 tsp thyme
- pinch of chili flakes (optional)
- 1 large can of diced tomatoes
- 1 1/2 cup of lentils (any kind will do)
- 4 cups of veggie broth, and 2 cups of water
- Salt and pepper to taste
Directions
- Melt the butter over medium heat, and add onion, carrots and garlic
- Cook this mixture for 10 minutes, until onions are fully translucent
- Add Lucky Iron Fish and remaining ingredients and cook on medium to low heat for 10 minutes
- Remove Lucky Iron Fish (wash and dry thoroughly), then continue cooking for 20 minutes
- Finish with a hand blender to make it an even consistency
