Iron-Enriched Homemade Popsicles
Its always popsicle-o-clock, and we're infusing one of our favourite treats with a boost of natural iron!💪
- 1 Lucky Iron Fish or Leaf
- 4 cups coconut milk
- 2-3 drops lemon juice
- Maple syrup
- 2 cups frozen strawberries
- 2 cups frozen blackberries
Bring 4 cups of coconut milk to boil. Then add 2-3 drops of lemon juice and your Lucky Iron Fish or Leaf!
Let the liquid boil for 10 minutes. Then remove the Lucky Iron Fish or Leaf. Allow the iron-enriched coconut milk to cool down.
Pour 1⅓ cups of the coconut milk in a separate bowl. To this, add maple syrup to your taste.
Pour the remaining coconut milk in a blender. Add 2 cups of frozen strawberries + maple syrup and puree. Transfer 1⅓ cups of the mixture to a separate bowl.
Add frozen blackberries to the remaining 1⅓ cups puree and blend. Adjust sweetness if needed.
In your popsicle mould, pour the white mixture first, then the light pink, and finally the dark pink. Then place it in the freezer at least for an hour.
