Pantry Essentials: Green Goddess Soup

Immunity-boosting veggies, check! Layers of flavour, check! Smooth and creamy consistency, check!

For anyone who joined us on Instagram LIVE earlier today, you got to see us make this recipe with the ingredients listed below. But using a few onions and any greens you have available, you can make your own version of a Green Goddess Soup.

INGREDIENTS:

- 1 Lucky Iron Fish/ Leaf
- 3 medium onions
- 5 garlic cloves
- a knob of ginger
- 2 cups broccoli, fresh or frozen
- 2 cups spinach, fresh or frozen
- 4 cups broth
- 2 cups stems of parsley/ cilantro
- olive oil

*you can substitute or add other veggies you have on hand; zucchini, basil, leeks, kale are some ingredients that will go really well with this recipe!

DIRECTIONS:

1️⃣ On medium-high heat, add olive oil and  roughly chopped onions in a deep pot. Sprinkle a bit of salt and let the onions caramelize. Approx. 4-5 minutes.

2️⃣ Meanwhile, bring 4 cups of water to a boil in a kettle. You can also prep any other ingredients you may need to: slice the garlic, ginger, and herb stems. 

3️⃣ Once the onions are caramelized, add a pinch of black pepper and stir to allow the pepper to bloom. After a minute, pour the hot water to the pot. Then add the Lucky Iron Fish/ Leaf and continue to boil for 10 minutes. 

4️⃣ After 10 minutes, remove the Fish/ Leaf. Wash it with water and soap, and then thoroughly dry it so there is no moisture left on the surface. Read more about use & care here

5️⃣ Add all the veggies and cook it till they are tender, but avoid cooking for so long that the greens start to lose their colour. 

6️⃣ Turn off the heat. Add garlic, ginger, and herb stems. Stir and then cover the pot with a lid. Let it sit for at least 3-4 minutes. 

7️⃣ Using a hand blender or a regular blender, puree the soup till it is smooth and creamy in consistency. 

 

Adding the garlic, ginger, and herb stems at the end will give this soup a fresh and complex flavour. You can top the soup with some more olive oil, croutons, coconut cream, preserved lemons... anything you have and prefer!
