Oatmeal is a comforting, go-to option for many of us in the mornings. Not only is it filling and nutritious, it’s super versatile and can be made for sweet and savoury palates. This version falls under the latter category, and is a great way to pack your morning with extra nutrients. Oats are already considered an iron-rich food, and you can incorporate your Lucky Iron Fish when cooking them for an extra boost. Rise and shine!
Makes 2 servings
Ingredients
Oatmeal:
1 small yellow onion
4-6 cremini mushrooms
1 cup rolled oats
2 cups Lucky Iron Fish water
1 tsp coconut oil
2 garlic cloves, minced
Fresh herbs like sage or thyme
Pinch of pink Himalayan salt
Toppings:
Avocado
Pickled turnip
Hemp hearts
Flax seeds
Carrots
Pickles
Red onion
Hot sauce
Fresh parsley or cilantro
Directions
- In a medium saucepan, melt coconut oil on medium heat. Add chopped onions and mushrooms. Sautee on low until the onions turn translucent and mushrooms have lost moisture.
- Add minced garlic and saute until fragrant and partially cooked (a couple of minutes).
- Add Lucky Iron Fish water and bring to a boil. Once boiling add the rolled oats, herbs and salt. Continue to stir to keep oats from sticking to pot. Cook for 10-15 minutes or until oats have cooked through and water has been absorbed.
- Plate the oatmeal and finish with your favourite choice of toppings. Drizzle with olive oil and hot sauce if preferred. Enjoy!
